About Don Julio Tequila
Don Julio Gonzales’ passion for making tequila started in 1942, establishing a distillery, La Primevera, where he spent nearly forty years perfecting his recipe. He believed that in order to create sublime and subtle tequila you must perfect and cherish each step along the way: from the cultivation of the agave plant to the barrels the tequila is aged in. It is not a process that can be performed by machines. Each step requires the skilled and practiced hands of people trained in the art and craft of tequila. This is what sets Tequila Don Julio apart. This is what makes the world’s finest tequila.
Steps to making Don Julio Tequila
1. All made with estate-grown 100% blue agave
unlike some less premium tequilas
2. The agave is carefully tended for maximum sunlight
3. Jimadores (agave harvesters) wait up to ten years, instead of the standard four to five – to harvest the blue agave, for a mellower, more
fully developed agave flavor
4. Trimmed piñas, (agave hearts) are slowly
baked, by his traditional method, in La Primavera’s brick ovens
5. The agave juice is separated and fermentation begins, converting the sugar to alcohol
6. Each batch is twice distilled, achieving legendary smoothness
7. To age the tequila, Don Julio surpasses the official standards
8. Aging occurs in special American oak barrels for a subtle, toasty flavor
